Quick Doughnut "holes"

"I usually make these when in need of a quick sweet fix. My kids really enjoy them, as they are the perfect size for their little hands. I always have the ingredients on hand, which is another plus. These "holes" taste best when still slightly warm and fresh. I hope you enjoy them as much as we do. ** Note: the nutritional information will likely display a huge number of calories, taking into account 3 cups of oil, but please remember that not all this oil will actually be consumed, only a little gets absorbed into the doughnut as it is frying."

  • Heat the 3 cups of oil in a very deep frying pan or a pot.
  • Mix flour, sugar and baking powder in a bowl.
  • Add eggs and yogurt to the flour mixture and mix well.
  • Place the dough into the hot oil by tablespoon measure (you can test the oil by dropping a small amount of dough and if the oil bubbles around it immediately, it is ready for frying).
  • Fry the doughnuts on one side until golden-brown, then turn with a fork and fry on the other side.
  • Remove the doughnuts onto a plate lined with a couple of paper towels to drain the excess oil off.
  • Once cooled a little, dust with some powdered sugar and enjoy!
