  • Place Carrots and water in microwave-safe bowl and cover~ cook 4 minutes In saute pan melt butter, add lemon juice, zest and ginger and cook over low heat for 5 minutes Add carrots and continue to cook for 3-5 minutes longer.

I sliced my carrots on an angle and lightly steamed them before proceeding as per recipe and the DM, DS and I thoroughly enjoyed this sweet by slightly tartiness from the lemon.   2. I made these on the stove. I used olive oil instead of butter to be dairy free and no lemon zest. I mixed in the honey last because you should not heat honey to a high temperature. I may make this another time.
