Quick Fix Italian Chicken & Dumplings

  • In large pot bring the chicken stock, soup, and cream to a boil.
  • Dice both peppers and onion. Using a mini chopper makes this a breeze. Spray a bowl with cooking spray, add peppers, onions and tomatoes, and cook to soften in the microwave. Approx 2 minutes.
  • Add softened veggies and cooked chicken to pot of boiling stock. Stir in spices.
  • Drop biscuit quarters into pot. Do not stir. Let things return to boil, cook 10 minutes uncovered. Reduce heat to simmer, add lid and cook additional 7 minutes or until biscuits are done.
  • Avoid lifting the lid during the final cook time and don't over stir. Stirring will tear apart the dumplings.
  • Enjoy!

  1. What a great dish! We loved it and so did the neighbors we took it to. I had to make a few adaptions based on personal taste and what I had on hand. I used caramelized onions and pickled red peppers instead of red onion, red and green pepper. I also subbed 1 cup spaghetti sauce for the cherry tomatoes. SInce these are already soft I didn't microwave anything I just dumped it in the pan. I didn't have Italian seasoning so instead I used McCormick Grill Mates Vegetable seasoning and garlic pepper. I also make bisquick buttermilk dumplings. Other then that (lol) I followed the recipe. This will be made again - it was great. The only change I would make is to use cubbed chicken breasts next time. Oh or rotisserie chicken! YUM
     
  2. 5 Stars, comfort food that was quick and easy, made my Pennsylvania Dutch MIL feel right at home. DH urged me to include at least twice as much cooked chicken next time, but that was before we ate. As it was, we were all pleasantly full, thanks to the buttermilk biscuits. Although there was a lot of Italian seasoning, the net effect was good full flavor. I followed the directions precisely. I made this at home and carried in the stockpot to MIL's house 20 minutes away; it was still hot, and the biscuit topping did not suffer from the ride. I was surprised by how much I enjoyed this dish; I normally steer clear from heavy cream combined with cream of whatever soup. This goes in my Frequent Repeat pile of Zaar recipes.   3. This was soooo good when it was so cold the other day! I only used 2 Tbsp of Italian seasoning and I also substituted a can of diced tomatoes for the cherry tomatoes since I didn't have any. It turned out great and was very quick to prepare. Thanks for posting this one Crazy Granny!
     
  4. I'm always impressed when a recipe is quick to make and tastes good. This recipe is impressive! I never would have thought of using a can of buttermilk bisquits as dumplings. They worked great. Scared me a little when I saw how many spices were in the recipe but I went ahead and followed the recipe (except for the tomatoes). I didn't have any Italian Seasoning so I checked recipes on 'Zaar and found recipe #68017 - I now have enough Italian Seasoning to make Chicken & Dumplings one more time soon. Thanks for posting.   5. I used home-made chicken broth and a packet celery soup and then added my cooked chicken and vegetables; I also added peas and carrots as you suggested this soup would be great for leftovers! As I cannot get buttermilk biscuits in France - I made my own buttermilk dumplings.......as you can see from the photo, they worked perfectly and proves that this recipe is VERY versatile, no matter where you live in the world! My husband is not a great lover of too many herbs - so I cut back on the Italian seasoning to 1 tablspoon, we still got the Italian flavour but it was subtle. I also had to use creme fraiche, I had no cream available - and although the soup may not look as creamy as Andi of Longemeadow Farm's photo - it was quite creamy and EXTREMELY tasty! I hope that I have proved that a great idea for a recipe can be adapted to personal tastes and geographical areas - a lovely RSC recipe Crazy Granny - what a GOOD baby you have been!   3. This was a real treat for us. Sunday is a day I am looking for fast and easy. After spending a good time in the gardens we are tired. I turned to this recipe as a good source of nourishment and comfort. This was a wonderful addition to *RSC 10* contest. The recipe went together easily, and hand most things right on hand. One small change is that I had to use Bisquick for the dumplings instead of canned buttermilk biscuits and worked out perfectly. I did follow this recipe to a "T" including softening vegetables in microwave. Normally I I would of softened the vegetables right in the pot, but wanted to make the recipe as written. Our soup was a perfect consistency, not to thin, not to thick. I even used the 3 tablespoons of Italian seasoning with no adverse taste. All in all a great recipe. Best of luck, chef!
