Quick Garlic-Lemon Broccoli

"This is based on Cook's Illustrated "Skillet Broccoli" recipe. I added some extra heat. :)"

  • Separate broccoli florets from stalks, break florets into smallish pieces.
  • Peel the stalks (either with a peeler or by "boxing" them with a knife). Chop into 1/2 inch pieces.
  • In a 12" skillet (you'll need the room), cover and cook florets and stems with water over high heat for 2 minutes.
  • Remove cover, continue to cook over medium-high heat until water has evaporated and broccoli is tender, about 5 minutes.
  • Clear out the center of the pan, add garlic, chilies, and lemon zest. Cook for about 15 seconds before stirring it into the broccoli.
  • Remove from heat. Stir in lemon juice.
