Quick Gluten Free Scones

- 3 cups gluten-free bread mix (I use Orgran brand)
- 1 cup cream (single or pouring cream)
directions
- Preheat oven to 200°C.
- Mix ingredients and very lightly knead to form a soft dough. It is important to only knead until the mixture is combined.
- Roll dough out gentley, between two sheets of cling-wrap or baking paper. Roll to 2.5cm (1 inch) thickness. Cut with a scone or biscuit cutter into rounds.
- Bake on lightly floured trays. Place scones fairly close together to assist rising. Brush tops of scones with milk. Bake 10 minutes or until cooked.

I love this recipe because it is so quick to make in the morning, and very flexible. I also use the Bob's Red Mill GF flour mix, but I have also used Pamela's pancake mix before. I bake them in a mini-cupcake silicone baking pan so using 1 cup of flour I get 12 little rolls. I made a vegan version this morning replacing the cream with a tablespoon of olive oil and topping up with unsweetened coconut milk (the kind in the carton). I sprinkled sesame and chopped green onions on some, rosemary on others. Sometimes when I make scones I mix a teaspoon of Italian mixed herbs into the flour. This recipe in its simplicity got me into baking. So thanks @Jubes!

The flour mix I used was Schaer Brot Mix which doesn't contain any rising agents. I only had two cups flour and whipping cream, so I used 2/3 cup whipping cream and some water plus 1 teaspoon baking powder. Somehow it came to my mind to roll the dough and cut it into rolls, so I got nine rolls (1 inch thick) instead of proper sones - but I think they looked beautifully, and I love the flavour! As Sheynath stated they are very versatile, just what I was looking for! Thanks for sharing this recipe!

These couldn't be easier! I used a packaged GF mix from Bob's Red Mill and these are very tasty. I like that there is no sugar in the recipe, so the final product is versatile - can top with jam if you want sweet, but could also use as a savory bread for a sandwich. I am glad to have this recipe available!
