- 1 tablespoon vegetable oil
- 1⁄2 cup onion, chopped1/2 cup green bell peppers, chopped
- 2 cups cooked chicken, chopped
- 1 smoked sausage
- 2 cups cooked rice
- 2 cups red kidney beans (rinsed and drained, 1 can)
- 2 cups canned tomatoes (diced, 1 can)
- 1 cup medium hot salsa
- 1 teaspoon dried thyme leaves
- 1 teaspoon salt
directions
- Cook onion and bell pepper in oil until tender (about 5 minutes).
- Add all other ingredients.
- Bring to a boil.
- Reduce heat and simmer about 15 minutes.
- Serve and enjoy.
