Quick Mushroom Risotto (Pillsbury Bake-Off Winner)

  • Melt butter in large skillet over medium-high heat. Add onion and mushrooms; cook and stir 3 minutes.
  • Add rice, garlic powder and pepper; cook 2 minutes.
  • Stir in 1 can of the broth; cook 4 minutes, stirring constantly.
  • Gradually stir in remaining can of broth; cook 7 minutes or until liquid is almost absorbed, stirring frequently.
  • Stir in whipping cream.
  • Remove from heat.
  • Stir in 1/3 cup cheese.
  • Spoon into serving dish; sprinkle with 1 tablespoon cheese.

  2. This recipe turned out to be delicious! I used fresh mushrooms, added a bit of salt at the end, and more parmesan cheese. The family, especially my boyfriend, loved it. The consistency was very close to risotto, so I was impressed with how easy it was!
     
  3. This dish was good, but ultimately too salty. The amount of parmesan cheese was overwhelming to the other flavors. I added additional vegetables and used fresh mushrooms. Thanks for the post.
     
  4. First I need to say that I used regular Basmati rice and it took 25 mins start to finish. I used fat free coffee creamer to replace the heavy cream to cut back on the fat. The rice still had a rich flavor it not the liquid creaminess of arborio risotto. The garlic powder really filled out the flavor. I made this to go along with pork chops in mushroom sauce and they made a perfect pair. Made for Photo Tag.
     
  5. This was quick and surprisingly good - using instant rice ! Have always used arborio, and simmered a long time. Made 1/2 recipe for 2 of us, and have some left for lunch. I am... ~a mother of 2 kids (19 and 22) who are extremely picky eaters. The mere mention of "healthy" sends them running in the opposite direction. They prefer the creamy, cheesy, fried stuff that they weren't brought up on! ~a wife of a wonderful man who fights an expanding waistline and will lovingly eat most anything I set before him. Everything is 5 stars to him. :) He's the easiest customer a cook could ask for! ~a teacher who tends to reach for comfort foods to relieve stress. I am a middle school reading specialist. The miracles I see on a daily basis keeps me going! But it's also stressful, so keep me away from the cookie jar! I really have to fight off the sugary, fat-laden stuff that has no worth beyond the momentary comfort in my mouth. ~and I'm also a daughter who was brought up on home cooked meals back when calories meant nothing and taste was everything! That is an idea built into my system that's hard to shake! My mother raised 8 kids (I'm #7) on her home-cooking and I always teased her that she didn't raise a single skinny kid! I luckily inherited her great love of cooking and baking. (I miss you Mom!) ~finally, I'm "mom" to the best Bichon in the world. He is Quincy, our kid in a dogsuit.
