Quick N Easy Baked Apples and Honey

ingredients
- 2 granny smith apples
- fruit fresh
- cinnamon
- 4 tablespoons honey
- 4 teaspoons brown sugar
- 4 teaspoons dried fruit (blueberries, raisens, cranberries, etc)
- 2 large marshmallows
directions
- Core the apples and cut in half to form 4 thick rings. Place the rings on microwave safe plate. Sprinkle with Fruit Fresh.
- Microwave on high for about 3 minutes or until the centers start to bubble from juice.
- Sprinkle with a bit of cinnamon and drizzle with honey. Fill the centers of the apples with the dried fruit. Sprinkle the top with a little brown sugar. Cut 2 large marshmellows in half and place one on top of each apple covering the dried ffuit like a hat.
- Microwave on high for 30 seconds to 60 seconds until marshmellows are softened.
- For an added touch, brown the top of the marshmellows to a golden brown with a browning element or a oven broiler.
- Serve quickly but be careful of the hot insides of the apple!
- For individual servings, you can place the apples into single custard dishes instead of on a plate.

Although this recipe made only enough for the 2 of us, we weren't complaining, 'cause this sweet apple treat was most satisfying! It's not often that I do a think like this with marshmallows, but it certainly works out great! Thanks for sharing the recipe! UPDATE: We have moved the family to southern Oregon and started a farm. I now work for Microsoft as my day job and maintain the farm in spare time. WE are raising heritage turkeys and heritage pigs, plus some lamb and chicken eggs. The farm name is Lil Sprouts Farm.
We are now a family of 10, but with only 5 kids at home still.
I owe it all, the success we have seen, to my lovely wife, Brenda. She is the one that makes our family succeed.

Our dream is to retire early and move off to small town america, somewhere in a foresty area near a lake and mountains, then spend the day minding our family hardware store, family restaurant, and sailing.
Cooking has been a hobby of mine since I was a little boy in school. Being the youngest of 4 kids, with a moma and dad that worked full time, I had to learn to fend for myself pretty early. My dad always had a large garden with a variety of vegetables available to pick from.
