"This recipe is from the Vegetarian Express cookbook. I haven't tried it yet, but it looks like a delicious alternative to my other non-dairy pudding recipe (#58589)!"

  1. Let me start by saying that I don't even like tofu - I made this recipe because Kree wanted someone to try it. And now let me say, oh my goodness, this was DELICIOUS!!!! The texture to me was somewhere between a pudding and a mousse - very rich, and very smooth. The package of tofu I had was a little bigger than 10 ounces, so I tossed in a few white chocolate chips to have a little extra chocolate. I used two tablespoons of brown sugar and substituted cinnamon for nutmeg, and this is some of the best stuff I've put in my mouth as far as desserts go. I will definitely be making this again. Thanks so much for sharing, Kree, and for making me more of a tofu fan!

  2. after a night in the fridge it's great. think it could use an extra banana or maybe i just used too much chocolate (i estimated). make sure to leave lots of room for this ... it's very filling, of course it is tofu.

  3. This was my first time using silken tofu and I wasn't sure if I'd like it. But I do! I think it has a slight nuttiness that I associate with tofu but this adds to the richness of the dessert. In agreement with Bunkie that it's somewhere between a pudding and a mousse. I processed the tofu first, then added the chocolate and as soon as they started to mix, they thickened up nicely. I chilled it in a large bowl and ate my first portion with some apple slices and digestive biscuits - yum!

  4. Phenomenal -- more like a chocolate mousse than a pudding. I, too, used cinnamon instead of nutmeg, and, unwittingly I used 16 oz of tofu to 6 oz of chocolate. It was so quick and easy to prepare. Note that the texture was much improved after a night in the fridge.

  5. Too much chocolate in this,it turned out like icing.I microwaved it and used it to dip strawberries in.This was messy, but good. I may try it again with only half as much chocolate.I really like the idea of a snack made with tofu, and thought this was it.

I'm a real estate agent in the lovely city of Rochester, New York. That's not what I expected to do with my life. I got my bachelor's in psychology, my masters in literacy education, and I taught high school special education for two years. Then I discovered that helping people find the homes of their dreams was my real passion. I've been doing it for over two years now and still absolutely love my career. Other than that, I have a very spoiled Border Collie mix named Bear that I adopted from a local shelter in spring '08. He's gorgeous and fun and brings me great joy. Now if only I could find a man like that... LOL!
