"Quick ""Spanish"" Rice with Corn"

- 236.59 ml instant rice
- 226.79 g can tomato sauce
- 59.14 ml corn (frozen is fine, thaw first)
- 9.85 ml chili powder
- 9.85 ml cumin powder
directions
- In measuring cup, fill 2/3 c with tomato sauce, add water to equal a little over 1 cup.
- In med.
- saucepan, bring tomato sauce and water mixture to boil.
- Add rice, corn, chili powder and cumin.
- Cover, and remove from heat.
- Let stand 5 minutes until liquids have been absorbed Fluff with fork and serve.

Pretty spicy! I made it in the microwave with 1 cup long grain rice and 2 cups water and without the corn. Cook the rice and water covered for 6 minutes on high and 5 minutes on 50% power. Add tomato sauce and seasonings. Cook 10 minutes on 50% power. Let rest covered about 2 minutes. Stir and serve. Thanks!

I have a growing family - 3 horses, 2 dogs (1 being a Great Dane)!, 2 children, 2 cats and a boyfriend.
