Quick & Yummy Meatloaf

"I found a meatloaf recipe that used StoveTop Stuffing. I really liked it, but tweaked it to make it my own. Here is my version! (For appetizers, you can make these into meatloaf balls and use decorative appetizer picks to serve)"

  • Add the beef, egg, 1/4 cup of ketchup and Worcestershire sauce in a large mixing bowl. Mix until well blended. Add the stuffing mix to the raw beef mixture. Mix until the stuffing is completely blended into the beef mixture (I find using a clean hand to mix the beef and stuffing to be the best method). Form mixture into a log shape and put on baking sheet lined with parchment paper. Drizzle lots of ketchup over the top of the log. Bake in oven at 350 degrees until done (around 45 minutes - depending on the oven. Check periodically with a meat thermometer to ensure it is cooked thoroughly).

  1. As the other reviewers stated, this is very easy to make. I used 93% ground beef, which left our meatloaf dry. Since I always use 93%, I think I'll add 1/2 cup of milk when I make this next. Thank you for posting. Made for Fall PAC 2012
     
  2. This was good and easy to make. I followed the recipe exactly as written other then mine cooked in 30 minutes. We all enjoyed this but next time I would use more ground beef. It seemed like there was too much stuffing mix and not enough ground beef. Next time I would use 1.5 pounds and leave everything else the same. It had a good flavor and was filling. I will make this again! I was worried about the amount of worcestershire sauce as hubby normally isn't a big fan but he enjoyed the taste.
     
  3. I loved how EASY this was to put together. The taste was awesome also!! I followed the recipe exactly and hubby especially liked the crust we got on top of the meatloaf. Will be making this one again!! Made for Zaar Cookbook Tag Game 2012.
