Quinoa Barley Vegetable Pottage

ingredients
- 1 quart vegetable stock
- 4 quarts water, vary ratio with vegetable stock to taste
- 1 cup quinoa, prep as needed
- 1 cup pearl barley, prep as needed
- 3 -4 red potatoes, No 1s, washed, not peeled, cut into 1 inch cubes
- 3 -4 carrots, washed, not peeled, cut into 1 inch slices
- 1 parsnip, washed, not peeled, cut into 1 inch slices
- 2 -3 green onions, washed, cut small slices, include greens
- 1 leek, washed, cut slices, include greens as desired
- 1⁄2 head cabbage, washed, torn into pieces
directions
- Put Vegetable stock and water into 8qt pot and start heating on high.
- Prepare Quina and Barley as needed, add to pot and bring to a boil.
- Reduce heat to medium and cover for 4-5 minutes.
- While waiting, prep other ingredients adding them to the pot in the order of Potatoes/Carrots/Parsnip then Cabbage then Onions/Leek. This should help ensure they finish relatively the same time.
- Make certain there is enough liquid in the pot at this time such that vegetables are covered.
- Reduce heat and cook covered for roughly 20-25 minutes stirring periodically until vegetables are soft and there is very little liquid left.

I am AngelaStill's husband. If I were on the show "Can't Cook, Won't Cook", I would be in the "Won't Cook" section. When I'm in the mood, I love cooking. I love coming up with new recipe ideas. I mostly experiment with sauces for meats. I would cook more but with lots of work at college, it interferes, especially with my rest time :-).
I am a college student, 3rd/5 years. I am studying Computer Engineering Technology, which means all I can cook is a cup of joe, lol. I normally get A's and B's in my classes, but mostly because I push myself too hard. I love programming computers and microcomputers.

I am a sci-fi junkie. Well... ok I don't read /all/ sci-fi books, mostly P.K. Dick, Ray Bradbury, and similar authors. I also read some fantasy, but I'm not into some of trash fantasy that is out there.
I also like to write, as much as I hate to write. I was inspired by nanowrimo and finished 5000 words (out of 50000). I am working on a novel and ocassionally write poetry, which people seem to like for whatever reason i don't know, i personally think its trash.
