“This is a very versatile recipe - the original recipe didn't have spinach, beans or some of the seasonings - so feel free to play around with this! Some in my family treat these like a burger, eating a patty a bun with all the fixins; some spice it up with hot sauce; I like mine just on my plate. I think it would be good with shredded veggies mixed in, or made up like meatballs, or with different seasonings to suit your taste. For this recipe, 2 patties equal 1 serving .”

  1. Rinse the quinoa thoroughly. Place in a medium sauce pan with 2 cups water. Bring the water to a boil, reduce to a simmer, and cook until quinoa is tender and has absorbed the liquid, about 20 minutes. Cool.
  2. In a large bowl, combine the cooked quinoa, eggs, Parmesan, black beans, scallions, garlic, salt, spinach, breadcrumbs, seasoning. Let everything sit for a few minutes to absorb the liquid. NOTE: I also shake in my favorite steak or burger seasonings - I like Montreal steak seasoning but use whatever you prefer!
  3. Form patties 1/4 cup each.
  4. Heat olive oil in a large non-stick skillet. In 2 or 3 batches, cook the patties covered for 8-10 minutes on each side, or until browned and golden.
  5. Makes 14 patties.
