- 1 cup quinoa, uncooked
- 1 chicken bouillon cube
- 2 cups water
- 4 eggs, beaten
- 1⁄3 cup parmesan cheese
- 1 (15 ounce) can black beans, rinsed and drained
- 3 large scallions, sliced thin
- 3 garlic cloves, minced
- 1⁄2 teaspoon kosher salt
- 1 cup frozen chopped spinach or 1 cup fresh spinach, chopped
- 1 cup plain breadcrumbs
- 1 teaspoon olive oil
directions
- Rinse the quinoa thoroughly. Place in a medium sauce pan with 2 cups water. Bring the water to a boil, reduce to a simmer, and cook until quinoa is tender and has absorbed the liquid, about 20 minutes. Cool.
- In a large bowl, combine the cooked quinoa, eggs, Parmesan, black beans, scallions, garlic, salt, spinach, breadcrumbs, seasoning. Let everything sit for a few minutes to absorb the liquid. NOTE: I also shake in my favorite steak or burger seasonings - I like Montreal steak seasoning but use whatever you prefer!
- Form patties 1/4 cup each.
- Heat olive oil in a large non-stick skillet. In 2 or 3 batches, cook the patties covered for 8-10 minutes on each side, or until browned and golden.
- Makes 14 patties.
