- 2 cups quinoa, cooked
- 1⁄2 teaspoon kosher salt
- 2 teaspoons smoked paprika
- 1⁄2 teaspoon ground cumin, I do not use
- 1⁄2 teaspoon ground oregano
- 3 eggs, lightly beaten
- 1⁄4 cup vegetable oil
- 1⁄8 teaspoon black pepper (to taste)
- 1⁄4 teaspoon kosher salt
directions
- Combine quinoa, salt, smoked paprika, cumin, oregano and 2 eggs. You should have a dough like mixture, if not add another egg.
- Heat a large skillet or large griddle over medium high heat.
- Lightly oil skillet with vegetable oil.
- Make a 1/4 inch patty out of 1/4 cup of the quinoa mixture.
- Place on griddle/skillet.
- Repeat to make 7 more patties.
- Cook for 3 minutes on each side, until golden brown.
- Remove from heat and sprinkle with salt and pepper to taste.
