ingredients
- 1⁄2 cup quinoa
- 1 cup water
- 1 1⁄2 cups chickpeas
- 1⁄4 cup feta cheese
- 1⁄4 cup black olives (optional)
- 1⁄4 cup cherry tomatoes or 1/4 cup grape tomatoes
- 1⁄4 cup small onion or 1/4 cup green onion
- 1⁄4 cup yellow pepper
- 1⁄4 cup red pepper
- 1⁄4 cup sunflower seeds
- 1 cup salad greens or 1 cup spinach

Dressing
- 1 -2 garlic clove, chopped
- 1 tablespoon Dijon mustard
- 1 tablespoon brown sugar
- 1⁄4 cup balsamic vinegar
- 1⁄2 cup olive oil
directions
- Boil water, add quinoa, cover and simmer x15 min or till h2o absorbed. Let cool.
- Mix together all remaining ingredients except salad greens.Toss.
- Mix together dressing ingredients.Add greens and pour dressing over just before serving.
