Quinoa, Cucumber and Currant Salad

  • Rinse quinoa well under running water and drain.
  • Bring water to a boil in a medium size saucepan over medium heat. Add the quinoa and simmer uncovered until tender, 10 to 15 minutes.
  • Meanwhile, mix the oil, vinegar and Tabasco if using in a serving bowl. Add the currants. Peel, seed and cut the cucumbers into small dice and add them to the bowl.
  • When the quinoa is tender, drain it well and add to bowl. Toss all ingredients together while the grain is still warm. Season to taste with salt and pepper and serve at room temperature or chilled.

  1. I was so happy to stumble on this recipe! I had no time to really cook, it was a very late night so I didn't want anything heavy; I had a box of red Inca quinoa that had come apart at the seams and fresh cucumbers from my boss' garden to use up. I loved the sweeetness of the currants balancing the tang of balsamic. I still kept wanting just a little something more in the flavor, but I'm not sure what that would be. I will make this again though because it's quick and easy and a nice cool dish on a hot summer evening. Thanks, Mary! :) Made & enjoyed for Photo Tag Early Fall 2011.
     
  2. This tastes very healthy! Quick to put together. I will make this again and add some salt to the quinoa while it is simmering as I think I'd prefer it less bland; adding seasonings when serving just didn't take me all the way! I have two boys who will usually eat most things I put in front of them. As a single mom I use them as my guinea pigs....sometimes it works, sometimes it doesn't.
