- 8 ounces frozen chopped spinach, thawed
- 8 ounces lowfat plain cottage cheese
- 8 ounces low-fat sour cream
- 4 eggs
- 1⁄2 cup egg white
- 1⁄2 cup shredded mozzarella cheese or 1/2 cup shredded Italian cheese
- 1⁄2 cup quinoa (flakes, not the normal grain)
- 1⁄4 teaspoon sea salt
- 1⁄2 teaspoon garlic powder
directions
- Mix all the ingredients together in a large bowl.
- Transfer mixture to a pre-oiled lasagna pan.
- Bake for 50-55 minutes. Let cool 5 minutes before slicing.
