Directions

  1. In a medium saucepan, bring 2 cups water to boil. Add quinoa and return to boil.
  2. Reduce heat to low, cover and cook until all of the water is absorbed, 15 minutes.
  3. Cool.
  4. Place quinoa in a medium bowl and add remaining ingredients. Toss well with a fork to combine.
  5. Cover and refrigerate at least 2 hours before serving.
