- 1⁄2 cup quinoa
- 1 cup cherry tomatoes
- 1⁄2 avocado
- 1⁄4 cup cilantro
- 1 1⁄2 teaspoons olive oil
directions
- Cook 1/2 cup quinoa in 1 cup water, bring to boil then cook on low for 10 min.
- Let sit quinoa sit for 5 minutes then add rest of the ingredients.
