Quinoa With Wild Mushrooms (Vegan)

"Just a simple pilaf type dish. The mushrooms are what give it the flavor. You can use any type of mushroom, but I used a mixture of chantarelle and honeycup."

  • Heat 1 tablespoon of safflower oil in a pot. Add onions, celery, garlic, and thyme. Saute until soft.
  • Rinse quinoa and add water, cook over medium heat covered for about 15 minutes or until water is absorbed.
  • Meanwhile, in separate pan, heat remaining 1/2 ts safflower oil. Saute mushrooms until browned.
  • When quinoa is done, add the mushrooms in, along with the truffle oil, and salt to taste.
