ingredients
- 1 lb herring in wine sauce, drained
- 3 medium cucumbers, peeled, seeded, and sliced
- 1⁄2 lb firm ripe tomatoes, seeded and finely chopped
- 2 medium green peppers, seeded and finely chopped
- 1 large onion, finely chopped
directions
- Cut herring into bite sized pieces. Place in a large bowl and add the other ingredients and toss well. Chill in your refrigerator until ready to serve, then toss again.

Between 4 and 5, probably closer to five. Nice simple salad, I did add shallot nice white onion for a milder taste to let the herring come through. I subbed the green pepper for 1/2 green and 3/4 red, not as much pepper. Cucumber was seedless, but peeled, no change there and I did add some fresh chives. I served mine in a small lettuce cup (Bibb) lettuce as a small appetizer or starter, squeezed some fresh lemon over the top. Served it with a cheese plate and crackers so they would eat some crackers with it and it was great. Thx for sharing, I enjoyed it very much.
