Ingredients: vegetable oil; 2 large sweet vidalia onions; 2 (5 ounce) cans evaporated milk; 1 cup flour; 1/2 teaspoon dry mustard; 1/2 teaspoon cayenne pepper; 1 teaspoon sweet paprika; coarse salt, to taste; 1 cup low-fat sour cream; 1/4 cup chili sauce; 1/2 teaspoon cayenne pepper; 1/2 teaspoon cumin

ingredients

vegetable oil
2 large sweet vidalia onions
2 (5 ounce) cans evaporated milk
1 cup flour
¹⁄₂ teaspoon dry mustard
¹⁄₂ teaspoon cayenne pepper
1 teaspoon sweet paprika
coarse salt, to taste
Dipping Sauce
1 cup low-fat sour cream
¹⁄₄ cup chili sauce
¹⁄₂ teaspoon cayenne pepper
¹⁄₂ teaspoon cumin

directions

Heat 1" oil in a large frying pan over medium-high heat.
Slice onions across into 1" rings and separate, discarding the outer layer of skin.
Pour evaporated milk into a small bowl.
Mix flour with seasonings in a pie plate or shallow dish.
Dip individual rings in milk, then coat in flour.
Fry in a single layer in hot oil (about 360F) till golden brown.
Remove to brown paper bag or paper towel lined surface to drain.
Salt while hot, to taste.
For dipping sauce, combine all ingredients in a bowl and stir.
**15 minutes is approximately.

These have completely spoiled me! Whenever I order rings at a restaurant they never measure up to these crunchy, tasty ones.

I have made these numerous times and it ruins it for any other onion rings. Some things I do to make it go faster is I put the flour ingredients into my tupperware marinating container which has a lid. This way I can do like five at once. I also dip flour them twice and I find I have to double the flour ingredients because the flour gets to much like crumbs and then doesn't stick to the last few. Excellent!

I also tried this recipe, after seeing it on food network, Racheal Rays "30 minute meals" and it is a keeper. Very tasty and easy to prepare. We loved the sauce with the rings, but had to cut the spices a little for the kids. Wonderful recipe.
