  1. Remove mushroom stems and set aside.
  2. Brown Italian sausage in pan.
  3. Chop cooked sausage in food processor to taco meat consistency.
  4. In large bowl, mix sausage with breadcrumbs and half Parmesan cheese.
  5. Beat eggs in separate bowl and add to meat mixture.
  6. Fill each mushroom with a mounding spoonful of the stuffing mixture.
  7. Top each mushroom with shredded Parmesan cheese.
  8. Bake mushrooms at 325 degrees F until mushroom turns brown and is soft to the touch.
