  • In a saucepan, combine apricots, water, raisins, sugar, lemon juice, cornstarch & pumpkin pie spice, & cook over medium heat, stirring constantly, until mixture boils & thickens. Remove from heat & cool.
  • Preheat oven to 375 degrees F, & grease a 13"x9" baking dish.
  • In a large mixer bowl, cream butter & brown sugar.
  • Add flour, baking powder, salt & rolled oats, & mix well.
  • Pat half of this mixture into bottom of prepared baking dish, then spread cooled fruit mixture over that.
  • Sprinkle remaining flour mixture evenly over the fruit & lightly press it down.
  • Bake 22-25 minutes, or until firm in the center & topping is crisp.
  • Cool completely before cutting into 2" squares.

  1. I must say these took a bit more effort than the average bar type treat, but it was worth it I think. I didnt have pumpkin pie spice so I added equal parts cinnamon, nutmeg, ginger, and allspice (about a dash of each). These did taste better the next day as other have mentioned too.
     
  2. I love apricots and raisins so had to give this recipe a try. Very easy to make and enjoyed the rolled oat crust and topping. These bars reminded me of a fruitcake type cookie I used to get at our local Polish bakery. Enjoyed these with my morning coffee and will be making them again. Thanks Syd for another great recipe!
     
  3. Just pulled this out of the oven. My DD just could not wait to have a piece. So she let it cool for maybe all of 5 minutes. I liked the apricot/raisin mixture. The next day this bar tastes even better. The topping came out perfect I thought. Some of the oats would drop off but I'd not call it dry. Maybe a person could drop a few pieces of butter on top if they wanted it to stick together more. Thank you for sharing your recipe. Made for 1-2-3 Hit Wonders 2007 game
     
  4. These were very good but I found the crust to be a bit dry, I think the crust needed a little milk or water, so next time I will add some in, my DS loved these, thanks for sharing Syd!...Kitten:)
     
  5. these made really good breakfast bars and were enjoyed by everyone in my office. the recipe doesn't specify whether to use instant oatmeal or regular, so i used the regular. but the cooking time was 50 minutes in total. i loved the fruit filling.
