Raisin Pumpkin Muffins

  • Sift flour into a bowl.
  • Stir through brown sugar, baking powder, baking soda and mixed spice.
  • Remove seeds from pumpkin pieces and microwave on high for 5 minutes until just cooked but still firm.
  • Remove skin and cut into 1cm slices.
  • Toss through dry ingredients with raisins. Beat eggs together in a bowl.
  • Add milk.
  • Melt butter.
  • Make a well in the centre of the dry ingredients.
  • Add egg mixture, then butter.
  • Mix through gently.
  • Three-quarter fill greased muffin tins or line with muffin cases.
  • Sprinkle over pumpkin seeds and raw sugar. Bake at 200 degrees C for 20-25 minutes or until muffins spring back when lightly touched.

I live in Wellington New Zealand (the greatest country in the world). I work as a health care professional, have five children and seven grand children. Two of my Children live in Australia (the 2nd best country in the world). I enjoy going over there to visit them. I love gardening and the outdoors and am more and more getting into growing herbs. I suffer from arthritis and about two years ago had bi lateral knee replacements which has been a great success. Anyone out there who has had the same thing done I would love to hear from you. Thats about me I like the quiet life.
