Raisin-Vanilla-Plaits

"This is a wonderful recipe for yeast-free raisin-plaits. It is quite easy to make and tastes very yummy! I cant wait to serve this at Easter Sunday for breakfast. Great warm from the oven with just a touch of butter. For a variation try substitutin chocolate chips of cranberries for the raisins."

  • Preheat the oven to 180°C (350°F).
  • In a big bowl combine oil, low-fat quark, milk, sugar, vanilla and salt.
  • In a second bowl combine flour and baking powder and add to the wet ingredients. Knead into a smooth dough.
  • Incorporate the raisins (or chocolate chips or cranberries) and divide dough into four equal portions.
  • Divide each portion into three equal portions again and roll each of these out into long coils (about fingerthick or slightly thinner).
  • Take three of the coils and braid into a plait.
  • Place plaits on a paper-lined baking sheet and brush with the glaze.
  • Bake for 20-25 minutes until lightly browned.

  1. I'm not sure where I went wrong but I had to add quite a bit extra flour, perhaps in my recalculating the measurements I messed it up. I used whole wheat flour, 1/4 cup of ground flax seed, my homemade yoghurt which I drained first until it was thick as ricotta, vanilla extract and craisins instead of raisins and once I got enough flour in, it was very easy to handle and surprisingly easy to braid (never braided bread before). My boys particularly enjoyed it and if they're happy I'm happy :). Thanks for posting this yummy bread Lalaloula! Made and enjoyed for PAC Spring 2011 :)

  2. Can't believe how easily this all went together, & I had great fun with it every step of the way! I did use cream cheese, (but NOW have a lead on where I can get quark, so...) & then followed the rest of the recipe right on down (well, I, too, used venilla extract)! VERY, VERY NICE BREAD, & much more complicated looking than it really is! A DEFINITE KEEPER! [Tagged, made & reviewed in 1-2-3 Hit Wonders]

  3. This is an absolutely beautiful bread recipe. Mine turned out exactly as shown, lovely and soft and raisin-y with gentle sweetness. I used soy yogurt for the Quark, soymilk, and half applesauce-half canola oil. Also roughly half-and-half whole wheat and all purpose flour, and I had to use liquid vanilla extract as that's all I had. I should also note that wrapping the plaits in tinfoil keeps them lovely and fresh. I'm going to enjoy some right now! Thanks for a keeper!
