Ramen Ole Soup

"This is a quick, easy variation. Basically it is salad in the soup!!!! Refreshing change and stretches 1 package of ramen to 2 people. I use chopsticks and oriental soup spoon to eat it."

  • 4 cups water
  • 1 cup meat, cubed (chicken, turkey, pork, beef, shrimp, etc.)
  • 1 (3 ounce) package ramen noodles (match the meat)
  • 1 cup lettuce, shredded
  • 14 cup green onion, chopped
  • 14 cup radish, thinly sliced (optional)
  • 12 cup tomatoes, fresh chopped
  • 12 cup monterey jack cheese, shredded (or other)
  • oregano, dried and crushed to taste
  • hot sauce

directions

  • Bring water to a boil.
  • Brake ramen noodles before opening package. Add noodles and meat then cook 3 minutes. Add flavor packet and stir.
  • Divide soup between bowls. Add lettuce, green onion, radishes and tomatoes.
  • Sprinkle top with cheese and oregano. Give it a squirt or two of your favorite hot sauce (or not).
