Ranch Clam Chowder

"I never thought I would be tempted by a "quick fix" clam chowder recipe, but Hidden Valleys Ranch Dressing version is headed for my Zaar cookbook!"

  • In 3-quart saucepan, cook onion in butter over medium heat until onion is soft but not browned.
  • Add mushrooms and Worcestershire sauceand cook until mushrooms are soft and pan juices have almost evaporated.
  • n medium bowl, whisk together half-and-half, potato soup, wine and salad dressing mix until smooth.
  • Drain clam liquid into dressing mixture; stir into mushrooms in pan.
  • Cook, uncovered, until soup is heated through but not boiling.
  • Add clams to soup; cook until heated through.
  • Garnish each serving with parsley.

  1. I made this for my husband last night. It took only minutes to prepare and cook. Husband is a seafood lover from new york. He absolutely loved this and he is a die hard chowder critic. I did use chardonnay wine, and added a little more potatoe. Excellent recipe. Now I'm looking for a simple seafood stew (cioppino) recipe. Any suggestions?

  3. I simplified this a teensy bit more using a can of Campbell's Chunky New England Clam Chowder. I didn't have dried ranch dip mix, so used 2 Tbl. prepared ranch salad dressing and it worked perfectly! I prefer my "soup" kinda thick, so ionly added 2 Tbl. each of the half and half and the dry white wine. Forgot to add the worcestershire, but it was really, really good!! Thanks so much!!   4. I was intrigued by how unique this recipe is (and easy). I made it just as written, using fat free half-and-half. It's quite good, but the ranch was just a bit much for me. I added a little sugar to remedy that. This is a wonderful recipe that I will make again. I will just either cut the amount of ranch mix in half or double the other ingredients. Thanx for a great "quick fix" clam chowder!
     
  5. It was a little too tangy for us. I will try it again with less salad dressing mix.
