  • Combine freezer jam pectin and sugar in a medium bowl, stirring to evenly blend. Set aside.
  • In food processor or blender, purée 2-3 chipotle peppers and 3 tablespoons adobo sauce; remove seeds from peppers if less heat is desired. Add chipotle pepper purée and crushed raspberries to pectin mixture. Stir for 3 minutes. Serve immediately, if desired.
  • For longer storage, ladle jam into clean freezer jars, leaving 1/2-inch headspace; apply lids. Let stand until thickened, about 30 minutes. Refrigerate up to 3 weeks or freeze up to 1 year.
  • Yield: about five 8-ounce jars.

  3. Wow this is wonderful! One of my favorite treats/appetizers is pepper jam poured over cream cheese but haven't found a commercial pepper jam I like. This filled the bill perfectly taste-wise and it's quick and easy to make. Yum, yum, yum, yum, yum!
     
  4. This is the ultimate way to make jam. I love the quick appy of putting a heated jelly on cream cheese and this chipoltle bite is the best. We have a freezer full of frozen raspberries and I absolutely will make this recipe again and again.
     
  5. This is definately 10 stars!! I've never made a jam of any kind before but I love both chipotles and raspberries, so decided to try this. My intent was to try this with some chicken, but once made, I had to sneak a taste. I tried it with some cream cheese on a cracker.. and then another..and then another. I highly recommend this, folks.
