  • In saucepan add sugar to frozen raspberries and cook for 20-25 minutes, until sugar has dissolved. Then mash the mixture thoroughly.
  • Pour the mixture through a strainer and discard pulp.
  • Add the strained juice of two lemons, stir.
  • Add the 4 cups of boiling water. Let cool, then refrigerate.

  4. This recipe is a winner because you get the sumptuous colour, flavour and aroma of raspberries but the pesky seeds are discarded. I use fresh raspberries when I have too many all ripening at once (haven't tried the original version with frozen fruit). Best served in a glass jug to appreciate the colour, a gorgeous deep cloudy pink. Last but not least, the flavour is intense, so it goes a long way diluted with mineral water or poured over ice cubes. Well worth the effort!
