Raspberry & Cream Squares

  • Combine wafers and butter, press half of mixture on bottom of 8 inch square pan (reserve remaining half for topping).
  • Sprinkle berries over crust.
  • Whisk half-and-half and sugar until sugar dissolves.
  • In a separate bowl, whisk sour cream until smooth, and slowly whisk in half-and-half mixture.
  • Pour this over berries.
  • Sprinkle remaining crumbs on top.
  • Cover and freeze for 3 hours or until solid.
  • Cut into squares.

  1. I'm a sucker for a raspberry recipe. I knew when I saw this one that it wouldn't be long before I just had to try it! This is absolutely wonderful, Dana! A delicious, light treat that could be used for any occasion, including snacking! Thanks for this one, Dana. It's a keeper!
     
  2. Quite yummy, it would be a perfect dish to eat outside in the yard on a hot summer afternoon. I put mine in the microwave for about 20 seconds to thaw it out enough for me to eat it.
     
  3. This was good. I didnt have all raspberries, so I used a bag of mixed berried. Still it was really good.
     
  4. I made this yesterday using only the raspberries, and subbing skim milk for the half & half, Splenda, and fat free sour cream. I evenly put in the raspberries into a foil-lined 8x8 and poured the mixture over it. Covered it in more tin foil and froze as directed. A few hours later, cut myself a slice (had a tough time of it because, well, it was frozen) and ate. It was GOOD! Like having frozen, creamy, fruity fudge minus the chocolate! Just have to keep it frozen though. However, I didn't really like the sour taste the cream gave it. Next time, I'mm sub in fat free plain yogurt to make it sweeter. But for now I will just enjoy the rest while thinking about and praying for you and your loved ones! ::hugs::
     
  5. I had some raspberries lurking in my freezer, so I tried this recipe. Very nice, a good summery dessert. I did find that it tasted better when I let it thaw a bit before serving. Oh, and I added a few drops of coconut extract to the sour cream mixture too, which gave it a nice flavor. I think this would be a good dish for a bridal shower or a summer wedding.
