Raspberry Icebox Dessert

“Found this recipe in "Taste of Home's" 2004 Holiday Recipe Card Collection. Served for my church womens group mtg. and they loved it. A little fussy, but well worth the compliments. Do need to be aware of folks who may have a problem with seeds. Set a note by dish or inform your group. A refreshing, creative way to present the wonderful taste of raspberries.”

Directions

  1. In a bowl, combine the gelatin and water; stir until gelatin is dissolved. Fold in the raspberries. Refrigerate for 1 hour or until syrupy.
  2. In a small bowl, combine the cracker crumbs, brown sugar and butter. Press into a greased 13-in x 9-in.x 2-in. dish.
  3. In a mixing bowl, beat the milk and pudding mix on low speed for 2 minutes.
  4. In another mixing bowl, beat the cream cheese until smooth. Gradually add pudding; spread over crust.
  5. Spoon gelatin mixture over the top. Chill until set. Refrigerate leftovers.
