- 1⁄2 lb Italian turkey sausage, sliced thin
- 2 cups celery, sliced
- 2 lbs zucchini, sliced
- 1 cup onion, diced
- 2 (28 ounce) no-salt-added diced tomatoes
- 2 teaspoons oregano
- 1 teaspoon basil
- 1 green pepper, diced
- 1 red pepper, diced
- 1⁄2 teaspoon garlic powder
- 2 teaspoons italian seasoning
- 1 (15 ounce) can no-salt-added corn, drained (optional)
- 1 (15 ounce) can no salt added butter beans, drained (optional)
directions
- In a dutch oven, brown sausage, drain, return to pan.
- Add celery and onion, cook 5 minutes, stirring ocasionally.
- Add all remaining ingredients, simmer covered 30 minutes or until zuchini is tender, but not mushy.
