Directions

  1. Core cauliflower and break florets into small bite size pieces.
  2. Core radicchio and slice thinly.
  3. Place cauliflower and radicchio into a bowl.
  4. Add celery, scallions, raisins and pistachios.
  5. Toss ingredients gently.
  6. In a small bowl, whisk together vinegar, extra virgin olive oil, Dijon mustard and salt and pepper to taste. Whisk until all ingredients have blended completely.
  7. Pour the dressing over the salad and toss gently to coat.
  8. Serve immediately.
