Raw Food: Almond-Based Berry Smoothie

ingredients
- 118.29 ml almonds, soaked in water overnight
- 2 bananas
- 2 dates, pitted and chopped
- 118.29 ml blueberries or 118.29 ml strawberry, frozen is fine
- 118.29 ml water, to preferred consistency
directions
- Drain and rinse almonds.
- Put all ingredients in a blender. I put them in in order, and I never have a problem with the dates getting stuck in the bottom.
- Pulse until the chunks are broken up. Then blend until smooth.
- Makes 2 servings. I eat one serving, and save the other for the following day. The banana will cause some discoloration in the saved serving, but the taste is still good.

A smoothie to keep! I like how this was light, but filled with energy, and not overloaded with sweetness either- a nice balanced breakfast. I used ground almonds (not soaked of course) and subbed plums for the berries. The only problem was with small chunks of date, even after a lot of blending- I'd recommend soaking them with the almonds. Thick and lovely! Thanks!

I'd describe myself as enthusiastic and sometimes eccentric. I teach English in China, and it's an awesome job. As for my cooking philosophy, I like easy things that might take a long time to cook, but only need occasional tending (like bread or dals). Lately, I've been very interested in healthy substitutions to make dishes with less fat and/or more fiber. I've been experimenting with making tasty recipes that are free of processed sugars and flour. Since moving to China, I've found myself without an oven and without access to common ingredients, like Bisquick and vanilla ext., so I'm currently looking for breads or cakes that I can cook in a crockpot. I only post recipes that I have tried, and many are recipes that I have created myself.
