Re-Baked Potatoes

  • Preheat oven to 350.
  • Microwave bake the potatoes. (Time will vary according to your microwave)
  • Remove from microwave and cut potatoes into bite-sized pieces.
  • Place into an 8 X 12 baking dish that has been sprayed with non-stick spray.
  • Salt and pepper potatoes.
  • Cut butter into small pieces and distribute evenly over the top of the potatoes.
  • Sprinkle the cheddar cheese over the top of the potatoes.
  • Pour cream over all.
  • Bake uncovered in oven for 25-30 minutes or until cheese is well-melted and even a little crunchy.

I love to cook big meals for lots of people to eat. Gumbo, Lasagna, Spaghetti, Chicken Spaghetti, Red Beans & Rice are some of my favorite large dishes to cook. There are a few favorites that are my own "concoctions". My family has come to think of them as classics.
