  • 2 cups elbow macaroni, cooked
  • 2 tablespoons butter or 2 tablespoons margarine, if you prefer
  • 2 tablespoons flour
  • 12 teaspoon pepper
  • 12 teaspoon paprika
  • 2 12 cups milk
  • 1 12 cups grated cheese (I use colby or jack for a milder flavor or sharp cheddar for a stronger cheese flavor)

  • Melt butter and blend in flour and pepper, blending well.
  • Add milk and stir constantly over medium heat until thickened.
  • Add 1 cup of the grated cheese and stir until melted.
  • Combine macaroni with sauce and pour into a lightly greased 2-quart casserole dish.
  • Top with remaining cheese and sprinkle paprika on top.
  • Bake uncovered at 375° for 25 minutes.

  1. Excellent mac and cheese! I made as directed but used aged gouda and sharp cheddar. It was nice and cheesy and very creamy. Great comfort food on a cold and rainy day. Thanks for sharing. Made for Football Pool 2011.

  3. I think that this has the potential to be a very good mac & cheese recipe, it just needs more cheese!! Next time I make it, I think I'll double the cheese, other than that it's a great recipe!!
     
  4. We found this to be very lumpy and lacking in cheese favor. We were looking for something creamier like Kraft mac n' cheese. We did use whole wheat flour and noodles. Maybe the whole wheat flour caused the lumpiness?
     
  5. This was excellent! It was the perfect lunch for a rare cold afternoon here in TX. Both of my toddlers and myself cleaned our plates! We will definately be hanging on to this one!
