Directions

  1. In a large soup pot heat olive oil over medium heat and then stir in onion and garlic for 5 minutes.
  2. Stir in next 5 ingredients (oregano - soy sauce) and bring to a simmer and then add the beans, parsley and broth. Bring to a boil and then reduce heat to low and cook for 90 minutes.
  3. Remove bay leaves. Puree some of the beans using an immersion blender and then add the pasta. Bring soup back to a boil and cook for another minute.
