  • In a large pot bring 6 cups water to a boil. Add beans and boil for 2 minutes. Turn heat off and let beans soak for 1 hour.
  • In another large pot or Dutch oven over medium heat, melt butter and cook green onions, white onions, celery and garlic until soft but not brown.
  • Stir in beans and liquid, sausage and the seasonings.
  • Bring to boil, then reduce heat and simmer, partially covered for 3 hours or until beans are very soft.
  • If dry, add more water a little at a time.
  • Serve beans over rice, and garnish with additional green onions.
