Red Cabbage With Apples and Honey

- 4 whole black cardamom pods
- 1 teaspoon coriander seed
- 1⁄2 cup honey
- 4 cups apple juice
- 1⁄3 cup white wine vinegar
- 4 ounces bacon, cut into 1-by-1/2-inch strips
- 2 medium onions, peeled and thinly sliced
- 1 head red cabbage, quartered cored and thinly sliced
- 2 granny smith apples, cored and diced
directions
- Preheat oven to 300°F.
- Grind cardamom and coriander to powder in a spice grinder. Pass through a fine mesh sieve.
- In a small saucepan, heat the honey to boiling. Add the spices, apple juice and vinegar. Bring back to the boil and reduce by half.
- In a Dutch oven or medium cast iron pot, cook the bacon over medium heat until translucent and limp, 5-7 minutes. Add onions and saute 5 minutes. Add cabbage and apples and cook, stirring occasionally, until soft, about 15 minutes. Pour the honey-apple-vinegar sauce over the vegetables and toss to coat. Cover pot and place in preheated oven. Bake 2 hours, or until cabbage is very tender.
