Red Cabbage With Apples and Honey

  • Preheat oven to 300°F.
  • Grind cardamom and coriander to powder in a spice grinder. Pass through a fine mesh sieve.
  • In a small saucepan, heat the honey to boiling. Add the spices, apple juice and vinegar. Bring back to the boil and reduce by half.
  • In a Dutch oven or medium cast iron pot, cook the bacon over medium heat until translucent and limp, 5-7 minutes. Add onions and saute 5 minutes. Add cabbage and apples and cook, stirring occasionally, until soft, about 15 minutes. Pour the honey-apple-vinegar sauce over the vegetables and toss to coat. Cover pot and place in preheated oven. Bake 2 hours, or until cabbage is very tender.

I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
