  1. Boil potatoes until tender but firm. Drain.
  2. In skillet, heat oil over medium high heat. Add potatoes and season with salt. Cook, stirring, until golden brown and crispy, 8-10 minutes.
  3. Place potatoes on ovenproof serving platter. Top with enchilada sauce and cheese. Bake at 375 for 20-25 minutes, until cheese is melted.
