Red Deer Venison Ragu With Rigatoni & Fresh Ricotta

  • In a high sided sauté pan add olive oil and heat to medium and sauté the onions until translucent. Add in the sliced garlic and oregano. Sauté together for about 1 minute and then add the Ground Venison meat. Periodically mashing with a spoon to break up the meat into small pieces. Add in the tomatoes whole and cook about 20 minutes, during cooking break up the tomatoes. Season with salt and pepper to taste.
  • Bring a large pot of salted water to a boil and cook the rigatoni until al dente, about 11 minutes. When the pasta is cooked toss together with the Venison ragu and serve in a bowl. Garnish with a bit of fresh ricotta and a crack of black pepper.

  1. DH and I made this recipe for dinner tonight, as we had all the ingredients on hand, and it was quick for a weeknight meal. I used 15 oz of fresh tomatoes from my garden, supplemented with tomato paste diluted with water, as my tomatoes alone did not make it saucy enough. Otherwise, I followed the directions as indicated. This was a little bland for our tastes. We seasoned heavily with salt and pepper and some crushed red pepper flakes, which helped a little. We ended up adding a little parmesan to our individual servings (after having added ricotta) just to help boost the flavor. This recipe is good for a busy weeknight, but needs some more herbs and spices to really make it shine.
