  1. Melt Butter in a medium sauce pot.
  2. Mince onion and garlic.
  3. Add onion and saute about 3 min.
  4. Add garlic and saute for about 1 min.
  5. Add flour and stir until brown.
  6. Add tomato paste and mix well.
  7. Slowly add chicken stock and spices.
  8. Bring to a simmer until thickened.
  9. Pour over enchiladas or add to browned beef or chicken.
