  • Rinse lentils and rice and pick out any grit.
  • In a large saucepan, heat oil; cook onion about 1 minute.
  • Add vegetable stock and bring to a boil.
  • Add lentils and rice; simmer 20 minutes.
  • Add cumin, olive oil, salt and pepper to taste.

  1. Great soup that I ended up throwing into a crockpot. Good for a quick meal and even better if you would rather leave it for a few hours. The 2 year old got enthusiastic about this one - YAY! - and 8 servings went very quickly between the 2 1/2 of us.

  4. Wow! This was absolutely fantastic! My 8 year old daughter also thinks it's scrumptious. I used long grain brown rice and for the stock I used 6 cups of water and then a couple tablespoons of Knorr chicken bouillon. This was absolutely fantastic. Oh yes and I put everything in the crockpot on low for 5-6 hours. Amazing recipe! Thanks!
     
  5. I used to make a variation of this, but I lost the recipe. Thank you for posting this so I can make it again!! Terrific soup! I do two things differently. I add a chopped carrot when you add the lentils and rice and after the soup is cooked I blend it in batches so it is nice and creamy.

I live in Canada, and I work in the restaurant industry (not a chef!). Don't have a favorite cookbook, but I love these internet sites, (especially this one, where you can get the dietary info - that's cool). I'm pretty passionate about animals, and about my health, (regardless of what my beer and cigarette habit might say about me!). The majority of food I like to eat is vegetarian, if not, vegan. I am able to enjoy a good steak every now and again, however. As long as I don't have to cook it. (I hate cooking meat - makes such a mess...) I have recently had a month off - I took the time to backpack around Mexico by myself. Crazy? Nah. Well, maybe...
