Red Lentil Stew With Yogurt Sauce

  • Yogurt Sauce:.
  • Combine yogurt and cilantro in a small bowl. Use an immersion blender to finely chop cilantro and blend it in with the yogurt.
  • Cover and chill.
  • Lentil Stew:.
  • Heat oil in a large saucepan over medium heat. Add onion, bell pepper, and garlic; saute 8 minutes or until tender.
  • Add curry; cook 1 minute, stirring constantly.
  • Add broth and tomatoes to pan; bring to a boil.
  • Stir in lentils. Cover and reduce heat, and simmer 30 minutes or until lentils are very soft. Stir in ginger.
  • Using an immersion blender in pan, coarsely puree lentil mixture. Stir in cayenne pepper and salt if desired.
  • Serve lentil mixture with yogurt sauce.

  2. Delicious! I made it just as written and wouldn't change anything! As other reviewers have said, don't leave out the sauce. I am not usually much of a cilantro fan, but I really liked it in this. Thanks, I'll be making this again!
     
  3. This was lovely, and the touch of yogurt (or soy yogurt!) really makes it. I didn't have any cilantro but it was fine without. It was necessary to add 1-2 cups extra water to keep the lentils from sticking, and I probably more-than-doubled the curry powder- you need some spice, with this huge amount of lentils! That said, it tastes wonderful. Enjoying the leftovers!
     
  4. Delish! I agree with the previous posters that the sauce is essential to this recipe. I love the flavors in the stew- I thought they were right on. Only chages I made were to leave out the oil- other wise I kept to the recipe. Yum. It was easy and fast as well, making this a great one for a week-night. Thanks for posting!
