  1. Heat oil, add onions, salt and pepper and sugar. Cook gently for 1/2 hour until liquid is almost gone (quite a lot of liquid comes out at the beginning).
  2. Add wine and vinegar, simmer for 1/2 hour or until liquid is almost gone.
  3. Put into sterilised jars while still hot.
