- 4 boneless skinless chicken breast halves
- 1 (15 ounce) can black beans, drained
- 1 (12 ounce) jar roasted red peppers, undrained
- 1 (14 1/2 ounce) van mexican stewed tomatoes, undrained
- 1 large onion, chopped
- 1⁄4 teaspoon salt
- pepper
directions
- Place chicken in slow cooker.
- Combine remaining ingredients in a large bowl, and pour over chicken.
- Cover and cook 4-6 hours or until chicken is no longer pink.
- Serve over rice.

Life is busier than ever and I have become more dependent on my crockpot. I prefer recipes that creat dishes that stand on their own but also have enough versatility that leftovers can be reinvented oirginals. This certainly fit the bit on both counts. On the first night I was a little disappointed that the peppers were a little lost in the sauce, but they came through more on the leftovers. I made a soup by dicing the chicken and adding broth and frozen corn one night; and, served it over polenta wedges another. Thanks.
