  • Place chicken in slow cooker.
  • Combine remaining ingredients in a large bowl, and pour over chicken.
  • Cover and cook 4-6 hours or until chicken is no longer pink.
  • Serve over rice.

  1. Omitted beans to reduce carbs - used regular diced tomatoes and added 2 t chili powder, 1/2 t each garlic powder, oregano, and cumin instead of Mexican stewed tomatoes.
     
  2. Life is busier than ever and I have become more dependent on my crockpot. I prefer recipes that creat dishes that stand on their own but also have enough versatility that leftovers can be reinvented oirginals. This certainly fit the bit on both counts. On the first night I was a little disappointed that the peppers were a little lost in the sauce, but they came through more on the leftovers. I made a soup by dicing the chicken and adding broth and frozen corn one night; and, served it over polenta wedges another. Thanks.
     
  3. Great dinner! We really liked this very-simple-to-make dinner that tastes fantastic. I didn't have any Mexican tomatoes so used regular crushed tomatoes -- can't wait to try it again with the rotel tomatoes. Thanks for sharing!
