Red Raspberry Mousse Dessert

"From Taste of Home. Made this for my mom's birthday. My 1 year old neice slurped it up with gusto. Also very yummy in strawberry. Can't wait to try it in peach. ** Do not use sugar free gelatin- it will never firm. I also recomend not using preprepared whipped cream"

  • In a large bowl, dissolve gelatin in boiling water. Stir in raspberrier. Refrigerate until partially thickened. Fold in whipped cream.
  • Arrange the ladyfingers with rounded side out around the sides of an ungreased 9-in. spring form pan. Carefully spoon raspberry mixture into pan.
  • Cover and refrigerate until firm. Garnish with mint, raspberries and whipped cream if desired.
