  • Preheat Boiler.
  • Lightly coat top of bread slices with olive oil spray and season with salt and pepper.
  • Slice peppers lengthwise into ribbons.
  • Layer spinach, peppers and cheese on top of bread.
  • Broil until bread is golden and cheese is bubbly.
