ingredients
- 1⁄4 cup fine diced bell pepper
- 1⁄4 cup chopped onion
- 1 garlic clove, minced
- 1 tablespoon butter
- 1 1⁄2 cups chicken broth
- 1 (14 ounce) can petite diced tomatoes
- 1 cup rice
- salt
- cayenne pepper
- red pepper flakes
directions
- Cook garlic, onions and bell pepper in sauce pan with butter until soft.
- Add all remaining ingredients and bring to a boil.
- Reduce heat to low simmer and cover for 20 minutes stirring only once or twice half way through.
- Taste and adjust seasonings.
